A recent job listing for a Wingstop has raised questions about whether Baker intends to pivot from his original burger concept to focus on chicken wings, a move he deems more practical for rapid expansion.
The eatery, located at 9911 I-35 Frontage Rd, is currently under construction and aims to open before the end of 2026. In a conversation with What Now San Antonio, Baker shared his vision for the establishment, which he hopes will deliver a unique dining experience reminiscent of California’s iconic burger chains. He aims to replicate the success of Tommy’s Burger, known for its chili burgers, by prioritizing quality and consistency.
Baker’s initial focus on burgers included plans for freshly cut fries fried in lard—an approach that reflects his commitment to traditional preparation methods. However, after visiting a local Wingstop, he began to reconsider the logistics of opening a burger restaurant. “I built a burger spot, but that’s going to cost more to open, and I can’t open them just as fast,” he noted, highlighting the challenges of launching a burger-focused venue.
As the founder of the Cali Group, Baker has an extensive background in various food and beverage operations, including restaurant repair. His aspiration is to create a memorable and quick-service dining experience, akin to the efficiency of Raising Cane’s. “We want to make sure that service at our place is just like Raising Cane’s, it’s less than two minutes to get whatever food you want,” he stated.
The new restaurant will feature a double drive-thru and two walk-up windows, facilitating speedy service for customers on the go. Although the concept remains in flux, Baker’s enthusiasm for both burgers and wings signals an innovative approach to fast food in the area.
